
Chasing Tomatoes has teamed up with Kraft to bring you Recipes For Joy, this holiday's Kraft promotion where you can send e-cards to your friends with downloadable recipes, and Kraft donates $2 to Food Banks Canada. What a great idea! I was given a bunch of products, a pile of recipes, and some gift cards to buy groceries so we could try the recipes here at home over the holidays. This one caught our eye immediately and I served it with tequila lime shrimp for Kevin's 15th birthday dinner.
Salty bacon, sweet orange, tender spinach, and then balsamic dressing? The salad didn't last long-in fact, I was asked to make it again for Christmas Day.

4 cups packed torn mixed salad greens
4 cups packed baby spinach leaves
1 large naval orange, peeled, thinly sliced and halved
1/3 cup dried cranberries
1/3 cup thin red onion rings
2 slices low-sodium bacon, cooked, crumbled
1/3 cup Kraft Extra Virgin Olive Oil Aged Balsamic Vinaigrette Dressing
Combine all ingredients except the dressing. Add dressing just before serving; toss to coat.
Makes 6 servings, 1 cup each
