Apricot Garlic Shrimp

I had scooped a Rachel Ray magazine from a co-worker, and found this delicious looking picture of barbequed shrimp, so I decided to try it. What I didn't realize was it was the "Cook Without a Recipe" feature and while it listed all the ingredients and the general method, there was no measurements or anything.

Of course I didn't notice this until I was already cooking and dinner needed to be on the table, STAT. I was so irritated.

The shrimp turned out surprisingly delicious even though I had to wing it through, and I thought that you might like to try them.

-one pound of prawns, deveined and peeled
-1/3 cup apricot jam (I used my own home made apricot mango)
-2 garlic cloves
-a slug of soy sauce (about 1 Tbsp)

Put the jam, garlic, and soy sauce into a food processor and whiz it all up until smooth. Set aside.

Thread the shrimp onto skewers, then brush with the glaze. Grill until they are pink-ish and cooked through, brushing glaze over every little bit and sprinkling with pepper.

Serve with some peanut sauce.

Makes enough for 3 people, or would make a delicious appetizer if you used mini sized skewers.
